This salad shows that apricots can be combined with sweet and sour flavours.

Makes 4 servings

Ingredients

  • 600 g green beans (washed and ends cut off)

  • 100 g champignons

  • 4 red onions with green

  • 100 ml apple vinegar

  • 2 tablespoons honey

  • 4 - 6 apricots (washed and stones taken off)

  • 100 ml olive oil

  • salt and pepper

Method

  1. Clean the champignons and cut them into slices. Cut onions into quarters.

  2. In a pan heat up the olive oil and fry the champignons on a medium heat for 2-3 minutes.

  3. Then add the onions, honey and vinegar. Cook until the onions are still al dente.

  4. Take the pan off the heat and add the apricots and marinate for a couple of minutes.

  5. Plate on four plates and enjoy.
