This salad shows that apricots can be combined with sweet and sour flavours.
Makes 4 servings
Ingredients
600 g green beans (washed and ends cut off)
100 g champignons
4 red onions with green
100 ml apple vinegar
2 tablespoons honey
4 - 6 apricots (washed and stones taken off)
100 ml olive oil
salt and pepper
Method
Clean the champignons and cut them into slices. Cut onions into quarters.
In a pan heat up the olive oil and fry the champignons on a medium heat for 2-3 minutes.
Then add the onions, honey and vinegar. Cook until the onions are still al dente.
Take the pan off the heat and add the apricots and marinate for a couple of minutes.
Plate on four plates and enjoy.
