This refreshing salad is perfect for a hot summers day.
Makes 3-4 servings
Ingredients
- 150 grams feta cheese
- 750 grams water melon, cooled
- 1 small bunch fresh mint (chopped)
- 2 tablespoons extra olive oil
- 1 tablespoon whitewine vinegar (alternativly use lemon or lime juice)
- sea salt and freshly ground pepper to taste
Method
- Cut the feta cheese into 1-2 cm sized cubes.
- Remove the rind and the pips from the watermelon and
cut in to 2 cm sized cubes. - In a large bowl mix olive oil, vinegar, salt and pepper to taste.
- Add watermelon, feta and mint and mix well.
