This light starter is very easy to prepare and refreshing.
Makes 35 bites
Ingredients
- 150 grams quark or crème fraîche
- 8 sundried tomatoes
- 1 small bunch fresh basil (chopped)
- 1 tablespoon Italian dried herbs
- 2 medium sized cucumbers
- sea salt and freshly ground pepper to taste
Method
- Chop 6 tomatoes and mix with the quark or crème fraîche.
- Add the chopped basil, herbs, salt and pepper and blend to a soft paste.
- Wash and peel the cucumber, half and deseed with a spoon.
- Cut the cucumber in 3 cm long pieces and fill with the mixture and put them on a large plate.
- Cut 2 sundried tomatoes in fine slices and decorate the cucumber slices.
