A wonderful summer dish to enjoy with friends

Makes 4 servings

Ingredients

  • 500 g burrata

  • 300g raspberries

  • 2 teaspoons mustard

  • 1 tablespoons honey

  • 100 ml olive oil

  • salt and pepper

  • 1000 g tomatoes (different colours and sizes)

  • small bunch of basil

  • 4 stalks mint

Method

  1. Blend half of the raspberries with mustard and honey and put through a fine sieve and mix the dressing with the olive oil. Season with salt and pepper.

  2. Cut the tomatoes in slices and in small pieces.

  3. Arrange creamy burrata on a large plate. Place tomatoes and the other half of the raspberries on the mozzarella and add the dressing.

  4. Chop basil and mint roughly and sprinkle over the salad.
