I really like to have a good breakfast and this granola combined with yoghurt and seasonal fruit is as good as it can be. It is very nutritious and delicious at the same time. I start making my own a couple of months ago and would never eat a shop bought again.
Ingredients
100 grams spelt flakes
100 grams rolled oats
50 grams pumpkin seeds
50 grams walnuts
50 grams almond flakes
2 tablespoons chia seeds
1 large tablespoon of honey
2 tablespoons of sunflower oil
2 tablespoons cocoa nibs
Method
Heat oven to 200C/180C fan/gas 6.
Mix ingredients (spelt flakes, rolled oats, pumpkin seeds, walnuts, almond flakes, chia seeds) in a large saucepan, add the sunflower oil, water and honey and cook on a medium heat until the honey dissolves. This takes approximately 5 minutes.
Line a tray with baking paper. When the oven has reached the desired temperature, spread the mixture on the baking tray and bake for 15–20 minutes or until golden brown.
When the granola is ready add 2 teaspoons of cocoa. Then enjoy it with yoghurt, fresh fruits and good helping of honey. You can keep the Granola in an airtight container for approximately. 4 weeks.
To make an healthy breakfast sprinkle 4-5 tablespoons on top of plain yoghurt combined with seasonal fruit and some honey.
