Using Za'tar (middle Eastern spice mix) give this salad a special flavour.
Makes 2 - 4 servings
Ingredients
2 romaine hearts, washed
50g olives (mixed and deseeded), cut into small pieces
1 red bell pepper, washed, deseeded), cut into small pieces
4 ripe tomatoes, cleaned and cut into cubes
1 small cucumber, peeled and cut into cubes
2 tablespoons of fresh herbs (parsley, chives, tarragon)
Dressing
2 tablespoon extra virgin olive oil
1 tablespoon white balsam vinegar
2 teaspoons Za'tar (middle Eastern spice mix)
sea salt and pepper to taste
Method
Combine oil, vinegar, Za'tar, sea salt and pepper to a smooth dressing and put to the side.
On a large plate arrange romaine hearts leaves and sprinkle a bit of the dressing on them.
In a bowl mix cut tomato, cucumber and olives with the herbs.
Mix well with the dressing.
Using a tablespoon and put the salad mix in the leaves.
Serve as starter with some freshly baked bread.
