This salmon burgers are great for a dinner party or a light lunch.
Makes 8-10 patties
Ingredients
- 400 g organic salmon filets (skin cut off)
- 3 sping onions
- 50g bread crumbs
- 1 egg
- sea salt and freshly ground pepper to taste
- 2-3 tablespoons good quality frying oil
- Handful of salad leaves
Method
- Cut the salmon filets into 1 cm small pieces-
- Wash the spings onion and cut into thin rings and add to the fish-
- Mix the egg and the breadcrumbs into the fish mixture and season with salt and pepper to taste.
- Use wet hands and form approx. 10 patties and place them on a plate.
- Leave the patties 10 minutes in the fridge.
- Using a large frying pan and fry the patties gently in 2-3 tablespoons of oil.

Serve between burger buns or/and on some salad leaves, thinly chopped stripy beetroot. And serve with some fresh wild garlic dip (Method: blend 4 leaves of wild garlic with 4 tablespoons of greek yogurt using a blender. Add sea salt and freshly ground pepper to taste). Garnish with some fresh dill.
