This Christmas biscuits go well with mulled wine.

Makes 60 small biscuits

Ingredients

For the pastry

  • 250 grams flour
  • 1 teaspoon baking powder
  • 100 grams butter
  • 10 grams vanilla sugar
  • 1 pich salt
  • 3 eggs

For the filling

  • 400 grams grounded almonds
  • 400 grams chopped almonds
  • 200 grams butter
  • 90 grams sugar
  • 10 grams vanilla sugar
  • 4 tablespoons water

Method

  1. For the pastry mix flour, baking powder, butter, sugar, vanilla sugar, salt and eggs to a smooth dough.
  2. Wrap the dough in cling film and put it 30 minutes in the fridge.
  3. Pre-heat oven 180C/175C fan/gas 5.
  4. In a large pan dissolve butter and mix in the sugar, vanilla sugar, almonds as well as the water and stir well.
  5. Grease the oven tray (430 x 470 mm) and spread the dough evenly on the tray.
  6. Add almonds mixture and spread evenly.
  7. Bake in the hot oven for 20 - 30 minutes until golden brown.
  8. Leave to cool and cut into small triangle shapes. Sprinkle with some melted dark chocolate.
