This Christmas biscuits go well with mulled wine.
Makes 60 small biscuits
Ingredients
For the pastry
- 250 grams flour
- 1 teaspoon baking powder
- 100 grams butter
- 10 grams vanilla sugar
- 1 pich salt
- 3 eggs
For the filling
- 400 grams grounded almonds
- 400 grams chopped almonds
- 200 grams butter
- 90 grams sugar
- 10 grams vanilla sugar
- 4 tablespoons water
Method
- For the pastry mix flour, baking powder, butter, sugar, vanilla sugar, salt and eggs to a smooth dough.
- Wrap the dough in cling film and put it 30 minutes in the fridge.
- Pre-heat oven 180C/175C fan/gas 5.
- In a large pan dissolve butter and mix in the sugar, vanilla sugar, almonds as well as the water and stir well.
- Grease the oven tray (430 x 470 mm) and spread the dough evenly on the tray.
- Add almonds mixture and spread evenly.
- Bake in the hot oven for 20 - 30 minutes until golden brown.
- Leave to cool and cut into small triangle shapes. Sprinkle with some melted dark chocolate.
