Enjoy this fruit cake all year round.
Makes approx. 20 pieces
Ingredients
For the cake mixture:
- 250g butter (room temperature)
- 150g sugar
- 4 eggs
- 300g flour
- 2 teaspoons of baking powder
- pinch of salt
For the streusel:
- 225g flour
- 115g cold butter
- 90g sugar
- pinch of salt
- 100g almonds
For the fruit filling:
- 400g apples (peeled, deseeded and cut into thin slices)
Method
- Beat the eggs with an electric mixer by adding the sugar and the salt.
- Add the butter until you have a soft mixture. Then add the flour and the baking powder. Mix all well.
- Preheat the oven to 200C/180C fan/gas 6.
- Spread the cake mixture onto a greased baking tray.
- Place the apples slices evenly - one next to the other on the cake mixture.
- For the crumble: place the flour and sugar in a large bowl and mix well. Taking a few cubes of butter at a time rub into the flour mixture until you have the crumble.
- Place the crumble and the almonds evenly over the fruits.
- Bake in the hot oven for 45 min until golden brown.
- After baking leave the cake to cool down. Cut the cake into slices.
- Enjoy it with whipped cream or on its own with a nice cup of coffee or tea
Twists: this recipe is very versatile - you can use canned cherries, pears, plums or peaches instead of apples.
